Easy and quick to prepare, this Beef Carpaccio with Tomme de Savoie recipe is an ideal dish to enjoy in summer with a good salad.
Ingredients for 4 persons :
- 400 g of carpaccio meat
- 100 g of mushrooms, sliced under vacuum
- 60 g of tomme des Bauges
- 1 lemon
- 2 tbsp. chives
- 6 c. tablespoons of olive oil
- Salt pepper
Prepare the marinade: squeeze and pour the lemon juice into a bowl, add the salt and pepper, emulsify with the olive oil using a whisk, add the chopped chives.
Arrange the meat on the plates, with a brush brush with the marinade (lemon + olive oil). Put in the refrigerator for 10 minutes.
Remove the crust from the tomme and cut it into strips.
Take out the plates and place the sliced mushrooms, the strips of tomme on the meat, season with salt and freshly ground pepper. Serve very chilled.
Tip: You can replace the tomme with parmesan
